Traditional Wood Fired Ovens date back to the Roman Empire and were very popular throughout medieval Europe.  Back then, traditional wood fired stoves were often communial, in much the same way as local governments today provide public BBQs.

Traditionally a wood fired oven was made of brick or stone, and incorporated a single baking chamber.  While the modern wood fired stove is associated with pizza, they have been used for all kinds of cooking over the centuries, especially in Europe.

Wood fired ovens are also popular in the USA, and the video above illustrates the social element of the wood fired oven.  Of course, with our Australian outdoor lifestyle, the video below translates well to our Australian culture.

Old Favourite Pizza Dough Recipe

SERVES 6 -10 , 1 crust (12 inch thick or 14 inch thin)

Ingredients

  • 1 (1/4 ounce) package yeast
  • 4 tablespoons water (not hot)
  • 12 tablespoons water, cold
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 3 cups flour

Directions

  1. In a cup dissolve 1 pack of yeast in 4 tablespoons of warm (but not hot) water.
  2. Allow to proof (sit) for 10 minutes.
  3. In another cup, mix together 12 tablespoons of cold water, 1 tablespoon of olive oil, 1 teaspoon of salt and 1 tablespoon of honey.
  4. Add the wet ingredients (cold stuff first) to 3 cups of flour and mix (I sometimes use a food processor, but you can use your hands.) Allow the dough to rise. Personally, I make the dough the night before I need it, put it in the refrigerator overnight, and let it rise the next day (all day.) But as long as you let it rise at least 2 hours, it should be OK.

Old Favourite Pizza Sauce

Ingredients

Directions

  1. Combine all ingredients in a small saucepan.
  2. Cook over medium heat until sauce starts to boil.
  3. Lower heat and simmer, covered,for 30 to 45 minutes or until it is as thick as you like it.
  4. Makes enough for 2 pizzas.
